Apple Muffins

Hey everyone! It has been the most perfect week. My mom and boo stayed and got to visit us here in South Carolina. Surprisingly I only cooked for her once- we were too busy trying out all of the bbq places. But I did make Homemade Pizza. Always a goodie. Here’s a picture of my mom, sister, and I enjoying Charleston. Sooo many good pictures. I wish it was a blog-blog so I could share them all- especially of cute Calvin. But I will limit it to one picture and move on to these delicious apple muffins.


I first had these muffins last Christmas when I went down to my parents house. I could not get enough of them! Like seriously, I probably had a dozen. My mom made some of them in the baby muffin tins so I kept popping them in my mouth like every two seconds. I have been dreaming about them ever since. They are so moist, even Calvin loved them!


Apple Muffins

Yields 12

  • 2 cups shredded apples with the skins on ( I used my zoodle maker to make it quick.)
  • 2 cups sugar
  • 2 cups water
  • 1 cup butter
  • 2 teaspoons cinnamon
  • 2 teaspoons nutmeg
  • 1/2 t cloves

Boil these ingredients and then cool. Add:

  • 2 teaspoons baking soda
  • 3 1/2 cups flour

Bake at 350 degrees for 12-15 minutes until a toothpick comes out clean.

If you want a healthier version, use only 1 cup of sugar and substitute 1 cup of wheat flour for regular flour, 1/2 cup cocnut oil for butter and add 1 cup of oats.




Calvin has been a picky eater lately but he LOVED these muffins. He ate a whole one! It was the most adorable thing.


Also, I think I’m getting better with my camera! I feel that my photos are getting better and better and it makes me so excited. I absolutely love food blogging. I’m grateful that I have a hobby that I can do for the rest of my life, do with my kids, and have fun doing it. Plus, I’ve learned how to photograph so I can take cute pics of my kids without having to get professional ones. I highly recommend getting into it! It’s so much fun.

I’m actually craving muffins now and I have a great recipe I’m going to make-yes, another muffin recipe. I love them- maybe that’s why I have muffin tops. Probably.
