Salsa Chicken


Hey guys, first post since the new website design. I absolutely love it and I feel like I’m kind of professional, right? Sorry for the inconsistency. Life is just crazy busy with Ceth in PA school. I had no idea the long days we’d have. We are getting used to it and making it our new normal though. Once I graduate in 3 weeks (yay, finally) I’ll have a little more free time.

It’s hard with kids to keep up the hobbies that I enjoy- even though it shouldn’t be since I enjoy them- but I’ve learned that sometimes hobbies take self discipline too! By the end of the day I just feel so spent I just want to turn on a show and veg out but I know that by working on my blog (or any other hobby) I’ll feel so much better because I’m working on different skills, talents, and finding that creative outlet. This is just my little food journal- posting what I make for everyday stuff. It’s not Masterchef that’s for dang sure but for some reason I just love food- simple as it may be! And I always feel like I’m asking myself, “What do I even make for dinner everyday? Like, I don’t even remember.” Well, now I can just scroll through my blog!

I’ve been sharing more stories on instagram of what I make for dinner because I have a lot of staple meals I go to but I always just make up the meal as I go and never write down measurements for it so I’m not able to share it with you all. I’ll try to do better! Plus sometimes I have “helpers” who often like to add extra ingredients to work around. I love that they cook with me though. 🙂

This is one of those simple meals that I always go to. I’ll add whatever mexican-type food that’s in the fridge. It’s always a simple go-to for me and I really like how baked chicken turns out soft and juicy.


Salsa Chicken

  • 6-7 chicken tenderloins
  • 3/4 cup salsa
  • taco seasoning
  • 1 bell pepper
  • Cheese
  1. Set oven temperature to 375 degrees.
  2. Place chicken in a 9×9 or pan. Generously season it with taco seasoning and pour salsa over it. Add sliced bell pepper.
  3. Put in oven for 35-40 minutes and add cheese after.
  4. Put over rice. We mixed our rice with cream of chicken.



We’ve been having a lot of adventures here in Charleston and I’ve been loving it. It’s hard not to overshare on here about life so I try to stick to food but I always have to add a few pictures of the stinkers I catch every now and then.

    I made this last night and it was so easy and delicious! This meal idea will definitely be added to my go-to list. We served it with sour cream instead of cream of chicken which tasted great. Thanks so much for sharing! And I love the new website! 🙂
