Cranberry Cake


I have waited a year to post this wonderful cake. My mom made it last Christmas when we were at our old house. (They have now moved to Arkansas!)  It’s the kind of Holiday dessert that you also have for breakfast the next day, ya know?

I left my memory card at home when I flew back home to South Carolina and when I got it back I decided to save it for the holidays.



Cranberry Cake

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup heavy whipping cream
  • 1 tablespoon butter, melted
  • 2 cups fresh or frozen cranberries, halved


  • 1/2 cup butter, cubed
  • 1 cup heavy whipping cream
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  1. Preheat oven to 350 and grease a 9×13 baking pan.
  2. Whisk together the dry ingredients: flour, sugar, baking powder, and salt. Stir in the cream and butter until it is all moistened. Don’t overmix. Fold in the cranberries.
  3. Pour in pan and bake until golden brown around 30 to 35 minutes.
  4. While baking or cooling, make your sauce by melting butter in a sauce pan. Stir in cream, sugar, and brown sugar. Bring to a boil over medium heat, stirring constantly. Remove from heat and stir in the vanilla.
  5. Pour over individually served cakes.

I probably won’t be posting until after the new year- I’ve got some yummy, healthy recipes to kick us off right! I’m already feeling bogged down by sugar comas of holiday treats and am feeling that urge to get more clean eating into my body! But NOT YET. First, let’s just enjoy these sugar comas and holiday treats because I know I am going to miss them probably around January third…
