Happy new year everyone,
I’m attempting to write this while Ceth watches Star Wars. Why does everyone love these movies? I just don’t get it.. not my kind of movie. Why do I still keep looking up to see what’s going on though?
Well, where do I start? I’m ecstatic for this new year. Having goals is my favorite thing in life along with to-do lists, organizing, decorating, Starbucks, I could go on and on. I have a lot of loves. Oh and food, duh. Funny I’m writing this post as the first one of the year though because it has ground beef in it and I decided that I’m actually going vegetarian. It’s been a long time coming. I basically ate vegetarian as is but I guess it’s “official” now. However, this is my food journal- recipes I try out and save here for me and my family as well. I still cook meat in at least a fourth of our meals and will usually take out the meat for myself. I’ll still share a lot of recipes with meat because I still want to cook it for my family at times but I would say the majority of them will be meatless meals. Still family-friendly, kid-friendly, yummy recipes.
If you’ve scrolled through my feed you probably notice that I like carbs. Yeah, I’m not trendy. jk. We actually have about a third of our meals low-carb but for some reason I never post them. I’m going to try harder to take pictures of the recipes I try out this year because I have so many that I love and want to save here.
Well, my Uncle Quinn asked me to post a keto-friendly meal on the blog. I can do low carb (not no-carb) but keto is a whole different world to me. I tried a couple and they were okay but when I made this Cabbage Skillet- this was delicious and I’ve made it several times since.
Sidenote- Calvin was not as excited about Cabbage Skillet as everyone else. lol. I have a marco polo saved somewhere of me telling Calv we were having it for dinner and he’s crying, “Not Cadbage Skiwwet!! That’s not great idea!!” He doesn’t like 75% of the meals I make lately. I’m trying but we usually just end up feeding him his usual oatmeal he likes to eat every dinner. *sigh*
Cabbage Skillet Recipe
- 1 lb. Ground beef
- 1/2 cup good salsa (Not that canned crap. Get something local!)
- 3/4 cup Cheese
- Taco Seasoning
- 2 cups shredded Green Cabbage
- Green onions and Sour cream optional
- In these pictures I also added diced celery and bell peppers.
- Brown Ground Beef with taco seasoning or chili powder in a skillet.
- Add salsa, cabbage, and any other veggies to the skillet and reduce heat to medium, cover the skillet, and let simmer for 10-12 minutes until the cabbage is soft.
- Mix in cheese until it is melted.
- Add any optional garnishes.
