“Crap… I forgot to leave out meat.” Sometimes that sentence happens in our house, a lot. If it’s up to Ceth, he has meat in every meal. I didn’t grow up that way but I have now adapted to it. It doesn’t ever feel like a full, complete meal without the protein. On occasion, I like to have meatless meals if there is another ingredient in the recipe that is the star, like my Mushroom and Zucchini Tortellini. That one is a keeper. Stay tuned because I’m blogging that one next! If you forgot to leave out meat to thaw this is a good recipe.
What a good week it’s been! Since my brother and sister in law have moved closer to us last month to attend school we have been having so much fun with them playing games every night. Settlers of Catan, anyone? Munchkin? Some of our favorite games. That’s what we do in our free time when we don’t have homework, work, and the house is clean. We dedicate our evenings to eating good food and playing fun games. Everyone takes turns playing with Calvin until he goes to sleep for the night. Well, more realistically, everyone fights over who gets to play with Calvin. He’s a popular baby around here. My sister, Aisley, and her new husband will be moving here in April so we will all just have a big party. Why can’t my whole family just live in the same city? 😦 To top that I have made some yummy recipes. Who knew I would love this hobby so, so, so much? I’m always trying to think of how I can elevate different recipes now and I love sharing them! It is so fulfilling and my family likes it too. 🙂
I knew we had tomato soup so I asked if grilled cheese would be fine. Grilled cheese sandwiches are good just plain and simple but I decided to make a restaurant quality sandwich. And guess what I found in the fridge? Bacon bits and deli meat. Meat? Check. I also found mushrooms, onions, and of course, my favorite hickory liquid smoke. I know I’ve raved about this stuff before but I just love cooking with it!
I diced up my onions, washed my mushrooms, and threw it in the pan with some butter and about a teaspoon of the liquid smoke. The house soon started to fill up with that hickory smell I love so much.
I spread my butter on both sides, laid on my cheese, and sprinkled my bacon bits on it. Remember to keep the stove on really low so you don’t burn your bread before your cheese melts.
I added my mushrooms and onions, topped it off with my bread and waited till it was all cooked. I brought it to Ceth who declared it restaurant worthy. And it only took 15 minutes to make.
This isn’t some really creative recipe so I was hesitant to post it but I thought about it and I loved this simple meal. I want to be able to look back on my recipes when I don’t know what to make for dinner and find this and say “Oh yeah! I loved that.” Plus, this is my food journal, so I decided to go for it.
Our Grilled Cheese Sandwiches
- Hickory Liquid Smoke
- Cheese of your choice
- Deli Ham
- Bacon Bits
I feel like the quantities are your choice depending on how much you want to make and how much you prefer. I also feel like grilled cheeses are kind of self-explanatory- just stuff it in a sandwich. So I don’t have any directions but if you would like to see how I did it just follow my short tutorial above.
