Crunchy Cajun Chicken Tacos (Slowcooker)

I’m a little late on posting this but I have a good reason. My sister got married! I’m down in Lincoln, California (home) and we had a blast. She looked beautiful and the reception was awesome. Calvin only lasted oh so long though so we had to go home right after. We couldn’t help clean up after because Calvin was about to lose it… babies are the best. 🙂 Doesn’t she look gorgeous? Couldn’t help but put in a picture.

Sorry, back to the food since it is a food blog and not a blog blog. It’s been so busy we didn’t even remember it was Easter Sunday. My little sister asked if we could have my Chicken Pot Pie for Easter tomorrow. Not traditional but so good and it made me happy that it was requested. I should have done an Easter-ish post but whatevs. Good food is good food.

Chicken that cooks in the crockpot for 8 hours on low is going to be good on just about anything. So this meal is pretty dang good. It’s really easy and yummy. This is one of my go-to recipes now since it only has a couple ingredients and does not take a lot of work.If you don’t get up on time for a crockpot meal though you can always put it on high for 4 hours. Just make sure all the juices are soaked into the chicken.

I love these marinades. You can pick up any flavor of these and make any flavor of chicken on rice, tacos, pasta-I don’t know, anything.

I put four chicken breasts in my slow cooker and used about 3/4th’s the bottle. If you want to do the whole bottle, do 5-6 bigger chicken breasts.Put your frozen chicken in, pour your marinade in, and let it sit for eight hours on low till it turns into…

You might need to shred it up with a fork. It should shred pretty easily. Just stir and it should fall apart. Next, I sauteed some yellow and orange bell peppers. I love yellow and orange bell peppers because they add a sweetness to it. It adds a lot to this dish.

When setting up your tacos don’t let the chicken sit in the tortillas long or the juices will soak into the tortilla. Put your oven on broil and while it’s heating up put the chicken, bell peppers, and cheese into the tortillas. Put it in the oven for a couple minutes until crispy, let cool a little, and eat up. 🙂

Crunchy Cajun Chicken Tacos:

Yields 5-7 tacos depending on how you fill them.

  • Cajun Marinade
  • 4-6 bigger chicken breasts
  • Large Yellow bell pepper
  • Large Orange bell pepper
  • Cheese- as desired
  • Tortillas

Wake up and get that chicken in the slow cooker. I put mine in frozen. Pour the marinade over the chicken and let sit for eight hours on low. Once cooked turn your oven on broil and saute your bell peppers. Put your chicken in your tortilla along with your bell peppers and as much cheese as you would like. Broil for a couple minutes until crispy.


 

I had these for leftovers and they were just as good if not better as leftovers. It’s midnight right now and I’m seriously craving these now that I’ve been looking at these pictures. I think I might have to make these again soon. Oh, I love you crockpot.
