Banana Cookies

I am in love with these banana cookies. To give you an idea of how much, I woke up and went downstairs and what did I have for breakfast? I grabbed 6 cookies and went back upstairs to get ready for the day. To my credit, I was on vacation so when on vacation you’re on vacation eating. Well, when lunch came around I still wanted more so I grabbed 5 more cookies. 11 cookies guys. And that was me controlling myself because I seriously could have eaten way more, not even kidding. I feel very lucky to have a good metabolism!

Since I was at my mom’s house I got to play with all of her really, really cool baking things. She inherited them from the bakery I believe she worked at when she was younger. I wish I was still there (because I miss my mom and family) BUT also so I can take more pictures of what she had! You guys would have loved them. She had another scale, old whisks, just a ton of stuff. Next time.

Banana Cookies

  • 3/4 cup shortening
  • 3/4 cups white sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 2 mashed bananas or 3 if they are smaller
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups of flour
  • 1 to 2 cups chocolate chips
  1. Mash the bananas. I let my kitchen aid mash them pretty good. Cream in the shortening (see notes on why I use shortening and not butter) and white sugar.
  2. Add the egg, vanilla, salt, and baking soda.
  3. Fold in the flour. Add chocolate chips.

Notes:

If you plan to use butter, that is fine BUT they will turn out differently. The pictures are actually cookies I used with butter. They are still so delicious. If you use shortening they will be more of a dense cookie- more of a banana bread cookie. If you use butter they will turn out fluffy and more of a cake-like cookie.

The consistency is not like normal cookies dough- it is more wet. Don’t worry though, they will hold their shape.

This is my little sister Anika. Can you believe that I actually REDUCED the vibrance in her hair? lol. Yep, that gorgeous mane is actually that red. Us thin-haired people in the family are extremely jealous to say the least.

I like these better than regular chocolate chip cookies and I know you’ll love them. I probably won’t make them for awhile though because it’s one of those food items I can’t control myself around and the vacation-me went a little crazy on the sweets last week so it’s time to exercise a little self control. Just a little though.

P.s. that scooper in that picture is my great-great grandmothers when she worked in her candy shop. I told my mom she needs to will these to me when she dies. In a nice way.
