Veg n’ Cheese

Wow, I feel like I haven’t really kept up on any personal details in my blog like I used to. But I feel like I finally have my feet underneath me. I’m sitting in our new house we moved to (new to us), it’s finally all moved in and decorated, my husband is at his new job, and we are loving all of it. I finally feel like I have routine back. I’ve been getting up, working out, keeping my house clean, playing with Calv, making healthy dinners, and at night we get to watch our Longmire on Netflix with a little treat now and then. It’s perfect right? A little too perfect.. Hope I don’t jinx myself. 🙂

I’ve been craving mac n’ cheese but because I’m trying to add a little more vegetables and salads into our dinners I decided I could still satisfy my craving and keep it a little less carby. So I made the basic sauce that I usually make for mac n’ cheese but instead of pasta I used broccoli! You can use any vegetables of any assortment that you’d like.

Veg n’Cheese

  • 3 TBSP Flour
  • 3 TBSP butter
  • 1 1/2 cups milk
  • 1 to 1 1/2 cups of cheese
  • salt and pepper to taste
  • 4 cups cooked vegetables
  1. Have your cooked vegetables. If they were boiled or frozen make sure they are completely dry.
  2. Melt your butter in a saucepan. Add your flour and mix until it is a paste. Add your milk and whisk until it is a thick sauce. Add your cheese.
  3. This is where you get to be creative. You can keep it like your basic cheese sauce or you can choose to put garlic, onions, worcestershire, make it mexican and put some spices in it with chilis, put sausage in it, seriously- the possibilities are endless. Or- you can keep it simple with those four ingredients. 🙂

I decided to whip up some quick meatballs in my kitchenaid (seriously, meatballs are so much quicker than you think!) and have some BBQ sauce over them, while over my veg n’cheese.

I have been trying out a lot of new recipes that I am in love with so I was thinking that I might do some reviews so I can have them saved in my blog for future use. I have all of my “favorites” on my “favorite food” board on pinterest but I would love to keep my go-to family faves on the blog. It is, afterall, originally my food journal. So, look out for my favorites from other food bloggers in the next few weeks!

As for now,  Ceth and I are going to enjoy this new house with the stockings we just put up, turn on the Christmas music, and try to be a little more healthy in the next couple weeks so that we can pig out on Christmas week with all the Christmas treats I can think of.
